Douro DOC Telheiro Santos 2020
An intense and deep Douro red, with a persistent finish and a striking character.
Made from traditional grape varieties such as Tinta Amarela, Touriga Franca and Tinta Roriz, this wine reveals a dry and full-bodied profile, with a high alcohol content and well-defined tannins. On the nose, aromas of ripe black fruit, jammy notes of sour cherries and figs stand out, surrounded by a spicy touch and quality wood. The palate is vigorous, with an enveloping texture, a slight warmth and a long, seductive finish.
Ideal to accompany strong-flavoured, well-seasoned dishes such as game stews, smoked sausages or matured meats. A wine that demands time, attention and a shared table - and which, with the right ageing, promises to surprise in the future.
Suggestions:
Stewed Boar Pie (cumin and aniseed); Migas de Peixe do Rio; Matured Pigeon; Boar Stew; Studded shank, or dried shank soups, salpicão from the cooking and asparagus bravos mixed in; It also goes well with a roast sausage from Trás-os-Montes, previously cooked rolled up in cabbage so that all the fat cooks off, accompanied by figs sautéed with garlic and broken bay leaves and then perfumed with Negrinha olive oil from the ash tree with little acidity.
Environment:
This wine requires a well-chosen environment, after aerating well, make sure that the environment is not too hot, as the wine itself brings the necessary heat. Once you've acclimatised well, make sure you drink this wine below room temperature so that its volatile compounds are balanced. Everything else is marginal, as this is a wine that fills any environment.
It is recommended, however, that it be "served" with the bottle wrapped, next to the nativity scene with a postcard saying: Christmas 2030.
